The Process
The washed method at Pablo's farm is artisinal and meticulous. It all begins with the selective picking of only the ripest coffee cherries. Experienced harvesters carefully handpick each cherry, ensuring that only the perfectly matured ones make it to the next stage.
Once harvested, the coffee cherries are fed into pulpers, which skillfully remove the outer layers. Next, the beans, still coated with some sticky mucilage, are placed in basins to undergo fermentation. After fermentation, the beans are meticulously washed in drip troughs or channels. Water is used to cleanse the beans thoroughly, removing any residual mucilage and preparing them for the drying process.
The washed coffee beans are carefully spread out on canvas-covered floors and left to dry for approximately three days. Throughout this period, the beans are regularly turned to ensure uniform drying and prevent any mold or spoilage.
As a result of this dedicated approach, the washed process yields a cup of coffee that delights the senses with its bright acidity, clean taste, and complex flavor notes.
